Total Time: 30 minutes, Serves: 4
- 6 to 9 cherry or plum tomatoes from Fassnight Creek Farm in Springfield, Missouri (or a local farm near you!)
- 1 small cucumber (peeled and chopped) from Milsap Farm in Springfield, Missouri (or a local farm near you!)
- 3 green onions (chopped)
- 1/4 cup fresh basil leaves (cut into thin strips)
- 3 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 3 tablespoons Terrell Creek Finley Feta (crumbled)
- Salt and freshly ground pepper to taste
In a large bowl, toss together the first 6 ingredients. Season with salt and pepper. Eat and enjoy!
